WMF Profi frying pan 28 cm: uncoated Cromargan stainless steel pan

The WMF Profi frying pan is a classic stainless steel pan without a coating. It is made entirely of Cromargan, WMF's polished 18/10 stainless steel, handle included. At 28 cm across it has enough room for several steaks, schnitzels or a big batch of fried potatoes.

Uncoated stainless steel has one clear advantage: there is no coating to wear or scratch. You can use metal utensils, get the pan very hot and put it in the dishwasher. It is well suited to searing for a good crust, and the browned bits left behind make a ready base for a sauce.

The pan works on gas, electric, ceramic, halogen and induction hobs. It is oven safe up to 250 °C, so you can sear a piece of meat on the hob and finish it in the oven. No lid is included.

Worth knowing: without a non-stick coating it takes a little practice. The pan needs to be properly preheated before fat and food go in, or things will stick. For eggs, pancakes or fish a coated pan is easier. The steel handle gets hot during long cooking and in the oven. Heat discolouration is normal with stainless steel and comes off with a steel cleaner.
